I don't have a screenshot, but Lucio Novelli is class, and is a free agent. He is 4.5 stars in almost everything.

Jair Ventura - my favorite assistant manager on FM12

Giambattista Venturati - A 4.5-5 star fitness coach but sign him as a coach or first team coach as he's quite handy at other things too.

Anyone recommend excellent youth coachs I can sign for Villa? had to sack the previous 3 as they were a bit.......pants. Keep approaching them but they're not interested in job offer. Even in lower leagues

Phil Cannon mate. Outstanding.

As others have said, Phil Cannon is an outstanding, allround coach.
Also, goood old Andy (Andrew) Cole is a superb attacking (surprise) coach.

It's true, I always always take Jair Ventura as my assistant when I can. He's never let me down.

Tony coton as an assistant manager, absolute quality!!

Jair Ventura is simply brilliant + he accepts low wages and is willing to sign for pretty much any half decent team

Paul McGuiness of United is absolutely fantastic. But compensation is obviously an issue; I can't remember how much it is off the top of my head.

Your standard Italian free agents are all great fitness coaches, Valter Di Salvo, Gian Nicola Biscotti and Massimo Neri (Who also makes for a good ball control coach) being the main candidates.
