I am looking to take over a good English side, probably Aston Villa or Everton and I want to start my career as a legendary retired football player that is unproven as manager, or coached at most one team (like Marco van Basten etc).

I have done this 3 times now, and I found it to be quite fun. I used FMRTE only to edit international caps and goals, just to make it that much more realistic. Anyway, I used Matt Le Tissier at West Brom, Luis Figo at Juventus, and finally I used Eric Cantona at Stoke. All were quite fun as I said. Those 3 are good one's to go with, but you could also go with (fat) Ronaldo, Garry Neville, Edwin van Der Sar, or Marc Overmars. Alternatively, give this list a quick look though, as it has some iconic retired players there; Retired _ World Footballers
