Poacher is finishing, pace, dribbling and off the ball. Target Man is heading, jumping, strength, finishing, off the ball etc. I feel the main difference between the two is pace. The poacher usually sits in line with the last defender, ready to run onto a through ball, whilst a target man waits for a cross within the box either to his head or foot and finishes off the move. not sure what complete forward is tbh. Check the in-game description of that.

Primary skills:

Poacher= pace acceleration

TM= strength, heading, jumping

All strikers: off the ball finishing composure first touch

Secondary skills:

Poacher: dribbling, agility
TM: long shots, balance

All strikers: determination

Have à look in the Tactic Creator where you Will see the important stats being highlighted for each role. Also take into account what ppms are good for each role. Àn Advanced FC benfits from having " beat offside trap or move into channels" whilst " comes deep to get ball" might be better for à DeepLying FC, played with back towards goal might be good for à TM with the supply set to feet.
