I've found that at least for Balanta the price changes on every save. I think there're some attributes randomized so in a save I find him available for 6-7M, in another over 11M

I think the save contains the snapshot of the database only (my guess). So it won't save the bugs (if not present in the db) when full relase and patches will go live.

AFAIK you can change staff's role only by offering him a new contract, changing the role there, but they often doesn't like to change roles. You can also try with "consensual termination" (not sure how it is in english), at the start of your career you should be able to fire all your staff...

With FM11 Steam's achievements worked only online and won't unlock achievements gained when offline. Dunno if FM12 will.
