The "Nike" defense, which consists of a CD on "Stopper" and another on "Cover" with zonal marking works great for me, especially if you have a great (fast and good anticipation) Cover CD who makes lots of goal saving tackles and interceptions.

But right now, Im managing a very average team and all my defenders are really slow (fastest acceleration is 10) and Im conceding way too many goals for my liking. So will it be best if I set my two CBs as "defend" and play offside?

Play a deep defensive line mate, so there fast strikers cannot get in behind, and dont play offside, keep the stopper + cover partnership as that works great.
 
set both cd's to cover instead of combo, defend VARY deep give up the offside and start scouting for some better defenders mathias j from fc københavn (denmark) seems to be *the* best cover for a bugdet team
