How do you get the best out of your CMs?

In every one of my saves the CMs are always really ineffective. I play a 4-2-3-1 with a CAM and 2 CMs with Chelsea (Fabregas and Pogba) and they very rarely average over 7.00 in a game. I play a possession based game so most of their game consists of retaining possession but how can I make it so they are getting more assists and scoring the odd goal as they hardly get any of them either. I find in this version the majority of my assists come from the wings so my CMs dont get many plaudits.
 
Make sure your tactic fits the players, instead of throwing players into your tactics. I'm not going to tell you to change your style/tactic in any way, but I would start with reviewing that. Also, make sure the roles work together and create space for each other ( example a Winger with the duty of Attack will push up and leave space for someone such as a WB to move up behind them ). Also, review your shouts. With a possession style, you don't want your team to be very spread out or playing a direct style of passing, and since you want the ball, you want to win it back quickly if you lose it, so you should high pressure where you can. I think this is a solid little paragraph of help, so I'll stop here. If you need more help, just PM me or something :)
 
Your tactics seem a bit muddled. You're telling the to exploit the centre, but also play wider? You're asking them to sit very deep defensively, but also hassle opponents.

The real issue here is probably telling them to play wider. If the majority of your goals are being supplied by the wings, then try taking that instruction off, so your play naturally stays narrower and thus flows through your CMs.

I find that by playing wider, this opens up more space in the middle of the pitch as the play is stretched allowing more room for the CAM. Beforehand it was so bunched and scrappy. What I will do is apply your suggestion, and on the player instructions, set the wingers to stay wide. That way the play will still be stretched but play will be focused more through the CMs. Hopefully that will work.

Also, regarding the defence and pressing, it is a combination i've used in several saves in FM14 and seems to work well. At Chelsea whilst Terry is still in defence I need to play deeper as he's an old carthorse!
