I interacted with this old man and told him he would be a good coach. He was eager to start and he got some awesome stats, something like 15 defending, 20 fitness, 13 tactical, 19 determination, 19 motivation and 20 discipline.

So how do I get him to become a coach? He is not interested in accepting a coach contract. So I let his contract run out and tried to get him then but now he refuses to talk to me. Is he simply not ready to become a coach yet?

Or have I missed something you have to do to get them to actually become coach (and not just given coach stats).
 
Should've made him join on player/coach contract, then when he's ready, he'd become full coach.
 
I usually ask them to start right away, then when there is a year or so left on their contract as a player, offern them a player coach role.

If the rest of his stats are as good as the ones lsited, you may want to try hiring him as your assistant.
 
I did the same thing with Sol Campbell at Newcastle. He probably isnt interested because you let his contract expire. Once I got Sol some coaching stats I changed his contract to player/coach.

Sadly I think the rest where in the 1-5 region. Not that it matters since he doesn't want to play with me :( Should have gone for the player/coach contract eh. Thought it would make him a worse coach being an active player too :(

(and I needed to reduce my wage budget)
