I'm thinking about making a 3421 which would line up abit like this:

ST
AML AMR
ML - MCL - MCR - MR
LCB -CB - RCB
GK

Wondering about player roles and the philosophy of the tactic. I was thinking that the middle CB could be moved back and played as a sweeper and the GK as a SK. Any ideas/tips?

That would depend entirely on the team and players you are using. Surely, you would use a different setup for a team like Napoli than Scunthorpe although I would use 2 more deepsitting MCs regardless of team

I was planning on using Sevilla and having the tactic on Control with shorter passing. Or using a French team... Really I want to use a team that can get the most out of the tactic, not the other way.
