That's not really how man-marking or zonal marking work mate. What you're on about is achieved by considering where a player is positioned when you lose the ball and then altering pressing instructions.
To win the ball back high up the pitch, use a very high defensive line and very high pressing. A loose, zonal system for every player will help out - if, and only if, your team is capable of playing that way. This way of playing is exceptionally dangerous at its extremes (that means have the world's best XI players who you can motivate to play well every match and who have gelled), and very tiring for players (stamina is going to have to be an important element in selecting who goes into your team - you'll need ten outfield players who are like duracell bunnies). But the fundamental sliders to use are d-line and pressing. Remember that positioning of the players (which is influenced by mentality) will also play a part in how you need to set up your pressing (think of pressing as being a circle around where the player is at the moment when your team loses the ball and that circle increases and decreases in size as you adjust the slider setting). I'd also have counter-attacking too. Playing the offside trap would also be highly recommended
If you don't want to take it to that extreme, you just have to find the right place on the sliders for the part of the pitch you want to win the ball back. Normal on all sliders mentioned should give you the middle of the pitch so increase from there. (Very, very rough method to get the foundations, then you have to tinker from there to get it right - pressing will probably need to be graduated and altered for individual positions and what you want the player in that position to do).
Sounds complex, but it isn't if you're willing to load up a game and tinker away whilst watching the match in full to see what is happening and how your changes will change how players play.
edit: or do you mean how to make your midfielders track back? The easiest way is to go with a man-marking system across midfield. That means the player will follow the first player who goes within pressing range until the ball is won back.
