Question about the reserve teams.

Is it possible to pick the reserve team, or at least get certain players picked?

It's very frustrating if I want to try a player out in the reserves and he never gets played.

yes go to team settings and select control resere team:L

You can take over the reserve team.

Will that boot the reserve manager out though or will it only be for the one game?

He will still be there just you will control matches

But it slows the game alot, takes more time to finish a season

I only want to take control occasionally, like when I've made a new signing, or want to try out a youth player.

no, all you have to do is untick the box saying take control of reserves when you want to stop.

What happens when you select the player for the reserve team via the reserve team tactics panel? Doesn't that make the reserve team manager play him in the position you have chosen?
