Does anyone ever untick both rest days (so that they are constantly training)?

I play classic mode, so there is no individual training to improve young players.

As a test, I unticked both rest days, set training to Balanced - High - 40% (match training set to Tactics Only) and have noticed a big improvement in attribute progress. There was also a notable improvement in performance during matches. Passes looked sharper, attacks looked sharper, defending was a lot stronger and my players seemed to go for the ball a lot more and make better decisions. Fitness was the most surprising effect. I found players recovered from games a lot more fully, lots of 100% for condition and match fitness. Plus everyone's morale was higher than would normally be.

My team, Aberdeen, currently is out of Europe, so we have more time between matches. During a congested schedule, my plan would be to set the intensity to Average to offset this.
