I've noticed that by far the way that I concede the most goals is when the opponent crosses the ball onto the foot of a striker who has broken away from the line of defense, meaning that they're not even heading the ball but instead just volleying it into the goal. Which specific tactics will stop this from happening?

That's just a simple case of either your D-Line being too high or not enough pressure on the crosser.
 
Assign defenders to mark/close down the opponent's wingers/fullbacks and specifically mark the players assigned to attack crosses. If you keep consistently getting beat down one side, it might be a personnel issue and you may need to either replace that player or change your tactical setup to cover for his weaknesses.
