I realise most GK attributes are important when searching/scouting for a player, but I was wondering if people know, why/what the importance of 'Eccentricity' is in a GK?
 
Eccentricity is how likely a goalkeeper will do something unexpected. So it is not a attribute you want to be high, but a low value in this may not be such a good thing either.
 
Hmmm so a value attribute of like, 7-13, is what I should ideally be looking for?
 
10 is a fine value for eccentricity. Tharros is correct.

However, if you player a sweeper keeper, especially one set to "attack" you'll need one to be highly eccentric.

Think of Tom Cruise in Top Gun.
