Bravery affects how likely they are to go in for headers, and composure is how they perform under pressure, like when being closed down (so... challenging for headers). Determination is again linked to how hard they try to win the ball and react to negative situations...Actually bravery doesn't affect heading, it only affects how much the player is willing to do something that has the possibility of injuring themselves. I don't know how much composure affects heading, but I know that it affects the player's finishing skills with the foot more. Determination doesn't affect any attribute in particular, however, it represents the mentality of the player meaning it affects in the background.
