Set pieces(even the defenisve ones) always have to be setup to suit the actuall players though.

I'm sorry to hear that. Defensive set pieces are all set to default, as like TheBetterHalf said, these should be tweaked realistically to suit your own players. Same goes even for attacking ones since you might have your smaller center back where I had my heading center back!
