More coach's the better

Is it better to have as many coaches as possible on a specific training schedule (ball control etc) or just 1 or 2 very high spec ones on each?

Yes of course!
The more coaches you got at their best roles you will have more stars for each training category,and more that stars the players will better train!
I am sure that in Tottenham which you are managing can buy good stuffs!

its better to have hich spec staff but make sure they are not over worked

usually i only get 1 or 2 coaches for each training..

It is better to have fewer better staff. 1 per training area, if you can get away with it (ie they are not being overworked). Sometimes because of board restrictions this may not be possible, but this is where First team coaches, and youth coaches are useful.
