Are player attributes going to change when the full game come out?

Unless there's an obvious typo kind of error (e.g. Pogba with a 7 for Passing instead of 17), there won't be any changes to attributes till the winter transfer window update.

AFAIK.

But you could always change them yourself once the full game is released with the pre-game editor.
