I accepted an offer for Adebayor on my Spurs save, but I kinda regret this.
I was wondering if there is any way of 'rewinding' or resetting this.

How long has it been since you accepted the offer, if you have a rolling save file, you may be able to go back t that but you'll loose all your progress from that point on.

Just cancel the confirmation of the transfer, onces he's agreed a contract.
