Is there anyway to start an save in a future year?
I would like to start when almost every current player is retired.

No, you have to start the game up as normal and holiday until you wish to, I could send you my Napoli game where most people are retired and some have become coaches, cant remember the exact year though... Also, it may be hard to win the champions league for a few years as my Napoli team are totally dominant?

Depends what year you are looking for. I have a save in 2037, and all real players are retired or have become coeches/managers. In that save I've been in a couple of different leagues, so if you can just beat my old Real Madrid team (left them for like 4 seasons ago, still dominating though) you should be fine.
