Wanting to host a new game, no dedicated time, play it by ear type of thing

I am looking for some players to play my game. We will decide what days and times to play after each session as I have a family and social life.
We will always try and play with all the players, if more than 2 are missing (depending on amount of players) then we will postpone session.
I am looking to run 2 or 3 leagues (tbd) My preference is serie a or premier league.
