In terms of, the moment you go 0-1 down their morale skydives from Superb to Very poor and they become complete headless chickens.

They haven't made a mistake. Their determination is 10, so other players with less determination don't get affected.

Is it pressure?

Because I have one of those players and if it's not fixable I suspect I should flog him or send him to the army to toughen up.

Yeah there are some hidden attributes that affect this. Temperament, pressure and important matches. Determination as well like you said.
