You have to use the resource archiver
go to C:\Program Files\Sports Interactive\Football Manager 2011\tools\resource archiver
then follow the instructions, cant remember exactly where the default images are

If you download the sortitoutsi cut out megapack that has all the default images edited to remove the white bits are the edges

Default graphics are at this directory -
C:\Program Files\Sports Interactive\Football Manager 2011\data. The file they are in(faces & logos) is graphics.fmf. use Resource Archiver to extract them, but don't move or delete the graphics.fmf

Thank you. Could I also ask whether it's possible to export team and player data (as in their stats etc) into a spreadsheet? Can't seem to find where the files for those are stored.

I dont think so, short of going through each player and making a spreadsheet that way.
