My cheese tastes haven't ventured very far past Cheddar to be quite honest, good thing Cheddar is good and suffices.

Brie, Goat's Cheese, Feta (in salads), Jarlsberg (it's my family's company;p ), Blue Stilton is AMAZING in sauces and hamburgers, parmeggiano on spaghetti dishes... I struggle with the really heavy ones mind.
