The only real concern with signing Kaka should be the question of his position in your tactics. Clearly, Chelsea prefer the 4-3-3, whereas Kaka is more suited to a 4-4-1-1 or 4-2-3-1. He's had a few injuries this year, but is no more injury prone than Torres.
Also, Hulk has the ability to go either way, he can take on his man and get to the byline, but is more comfortable cutting onto his stronger foot. You don't necessarily need 2 out and out wingers though. At United, we have Park/Nani on the left and the real width is provided by the full back. If you signed an attacking right back, Hulk would leave him a lot of space to attack - he'd be perfect for Chelsea. If I were a Chelsea fan, I'd like to see:
